Fish Tales

When I broil fish I like to cut it into strips roughly the width of the thickest part. 
This seems to help it cook evenly. 
This salmon got seasoned salt and a quick coat of sprayed olive oil before cooking.

One More Turkey

Brown up some mushrooms in butter 
Add some form of Truffle favor and a hand full of bread crumbs
Then chop it up in the food processor.

Butterfly the turkey breast 
Lay on a coating of the mushroom truffle stuffing
Tie them up with cotton twine

Roast at 350^ for about an hour
Baste a few times with pan juice
My thermometer read 180#

I used the convection setting for the last 15 Min to get a nice skin.
Let it rest at least 30 min covered with foil
Cross cut into medallions
I made a classic gravy with pan juice and milk.

Food - Cranberries

I start with a can of whole berry cranberry sauce.
I add almost an equal volume of fresh cranberries
Add 3/4 cup of sugar and cook till the fresh berries pop open
Cook a bit more, then add chopped tops from a bunch of cilantro. 
 

More Food, grilled chicken

Boneless chicken thighs on the grill. 
I like to marinade with Lawry's brand Teriyaki.
My parents used this version back in the 60's
I have been glad that it is still on the shelf.
I usually cook my chicken on the gas grill, 
it is much easier to have a slow steady heat with gas.
The experiment of using the sticks did not add to the dish.

More Sides

Chopped tomato salad with a mix of red and yellow tomatoes.
Seasoned salt, a bit of red onion and a good toss.

Food from the Grill

i like to get a rack-of-lamb and cut it apart.
Season with Goya Adobo Salt and grill over charcoal.
I put all the coals on one half of the grill.
The chops are prone to flame ups.
This way you can adjust the heat exposure.

More Food Ideas

Start with Cucumber, peel, seed and cut into small chunks. 
Sprinkle the chunks with kosher or sea salt, add very thin red onion slices.
Cover and chill for an hour or longer.
Now cross cut celery, mix into salad and serve. 
The Celery adds a nice crunch to this light clean side salad.

Thanksgiving Food ideas

When I buy Golden Beats the bunch seems to have a mix of sizes.
I peal the beats and cut then to a common size so they cook evenly.
I then boil them up. Once cooked i dress then with a little butter and creamy horse radish sauce.
If the horse radish seems to strong I dilute with a mayo.
