Waldbaums had some very nice whole salmon in today. I got in the mood to bone and stuff one for dinner.
Bone the fish leaving it mostly whole. Saute a coarse chop of onion, fennel and celery with some salt, pepper and tarragon ad a bit of cooked rise or bread crumbs. Fold the fish about the veg mix, tie it closed with string. bake at 350 till done a bit over 30 min. Let rest and serve.
